San Mai Chef - Swamp Rimu Burl, 52100 Bearing Steel and Wrought Iron
Big San Mai chef made from wrought iron cladding over bearing steel core. Hardened to 62 HRC. The Handle is stunning piece of stabilized New Zealand native swamp Rimu burl.

57mm deep at the heel
3mm thick at the spine distal taper to 1mm at the tip
277 grams in weight.
I used salvaged wrought iron wagon wheel, salvaged industrial bearing to forge the Sam Mai. In the forge and press I built myself. I hand forged the blade. Cut the block of Rimu from a slab, dried it and stabilized it myself. I made the mosiac pins in the handle with resin, stainless steel, copper and brass.
